Why does every essay need a "hook"? Can't I just state my argument?

I'm so tired of writing hooks. You know — the first sentence that's supposed to "grab the reader's attention." My professor says a good hook is essential. But I've read published essays that start with things like "In this essay, I will argue..." and they're fine. Why do we force students to write hooks when real writers don't always use them?

I tried skipping the hook in my last paper. Just went straight to my thesis. My professor wrote "missing hook" in the margin and took off two points. Two points! For not including a gimmicky first sentence.

Is this just a school thing? Do hooks matter in the real world? Because I'm spending more time trying to come up with clever openings than I am actually making my argument. It feels backwards. 🎣
